I’ll be sharing this one at the Shining Star Waldorf School Community Event this Saturday, December 10th. It’s going to be a fun event, with activities for the whole family!

This delicious soup is packed full of body-loving veggies, and all of the wonderful nutrients they bring with them! It is rich in vitamins C and K, antioxidants, and wonderful immune boosters.
Ingredients:
1 yellow or red onion
2 large leeks
10 cloves of garlic
1 bunch of asparagus
1 bunch of spinach
1 bunch of kale
1 large bunch of broccoli
½ a head of red cabbage
10 pureed tomatoes
½ cup of olive oil
8 cups of kidney beans
2 pinches of lemon pepper
2 pinches of garlic salt
1 pinch of smoked paprika
2 tablespoons of apple cider vinegar
Directions:
Saute vegetables in olive oil, add kidney bean broth to cover veggies and spices, simmer for 4 to 6 hours. Enjoy and be healthy!
